Tackle weeknight meals with ground beef like pro, by Kristin Larson | Editorials

With school back in session, activities and homework in full swing, getting a nutritious meal on the table is just one extra thing to worry about.

I know for me time is the thing I don’t ever have enough of once we get home. There are horses to ride, rodeo events to practice, homework to do, cleaning to do and get ready to do it all over again tomorrow!

I know I’m not alone many of you can substitute football, volleyball, dance, cross country, music lessons, chores in and you’re in the same boat as I’m in every night.  I’ve gotten better at planning our meals out for the week. I also love to try new recipes and it’s always fun when you find one your family loves.

If you’re worried about finding nutritious, easy meals to serve your family worry no more, the beef checkoff works to provide  you with quick and easy recipes and tips for one of the most versatile cuts of beef —  Ground Beef.

First things first, let’s address the question of frozen Ground Beef. It’s a freezer staple, but how do you shortcut the thawing process in a pinch. If you’ve got five minutes and a microwave, you’re all set. It’s so easy, you almost won’t believe it. Learn how in this video.  https://www.youtube.com/watch?v=TfDXlHsqO20&feature=youtube

You also have a variety of options when it comes to cooking Ground Beef. You can grill up Calypso Beef Burgers or Mediterranean Beef Meatball Kabobs. Or throw a pound in the skillet (minimal clean-up is a plus!) and whip up a Beef & Asparagus Pasta Toss. And for something cozy, serve up a family favorite, like customizable Five-Way Mini Meatloaves.

All of these delicious recipes can be found at the www.beefitswhatsfordinner.com website under recipes.  They all sound good to me, which one will you tackle tonight?
