The Philippine Embassy in Oslo is exploring the possibility of promoting Filipino cuisine in Norway with the help of two well-known chefs in Norway with Filipino blood.
Philippine Embassy Charge d’ Affaires Maria Elena Algabre sat down with top-notch chefs Christian Andre Pettersen and Roger Asakil Joya last week to discuss the opportunities of showcasing Filipino food in the mainstream Norwegian food market.

Pettersen, whose mother hails from Cebu, is Norway’s candidate to the Bocuse d’Or cooking competition. Pettersen is currently the head chef at Restaurant Mondo in Sandnes, Norway.
Touted as the world’s most prestigious and difficult gastronomic competition, the annual Bocuse d’ Or will be held in Lyon, France in January 2019.
On the other hand, Joya, who was born in Cavite, is the head chef at Sabi Omakase, an exclusive restaurant in Stavanger, Norway, which was awarded an illustrious Michelin star this year. Joya is the co-owner and founding partner of Sabi Sushi, Norway’s largest and leading chain in high-quality sushi.
The Philippine Embassy also invited Jacqueline Chio-Lauri, editor of ‘The Migrant Filipino Kitchen,’ a collection of stories and recipes by people of Filipino descent from around the world.
The book has been awarded the Sunshot Prose Finalist Prize 2017, and will be published by Illinois-based Agate Surrey in 2018.
Norway is home to some 20,000 Filipinos, around 75 percent of them working in the maritime industry. The rest are employed in the health care industry as physicians and nurses, information technology, as engineers in the petroleum industry and au pairs or household helps.
