Well, if you’re not cooking up a bacon storm for International Bacon Day or kicking back on a major Netflix sesh, maybe you should try making this really easy rainbow Malibu fudge.
If nothing else, it will at least make your day a little bit more colourful.
6 cups (840g) white chocolate chips
3 cups (420g) sweetened condensed milk
3 tsp Malibu
Food colouring to make rainbow colours
Line an 8”x8” baking pan with foil and lightly spray with cooking spray.
First Layer: Combine one cup (140g) of white chocolate chips and 1/2 cup (70g) sweetened condensed milk in a microwave safe bowl.
Heat on high for 30 seconds in the microwave and stir. Repeat until chips are fully melted and the mixture is smooth.
Stir in 1/2 tsp of Malibu and purple gel food colour until desired colour is achieved. Pour into prepared pan and refrigerate for 30 minutes.
Repeat the same steps for the remaining five colours.
After the final colour, refrigerate for at least an hour.
Remove the fudge from pan using the foil as handles.
Remove the foil and cut 1/4 inch thick slices from the fudge. Trim off edges, and cut in half.
