1 whole chicken, cut into pieces2 tsp salt, divided3 tbsp canola oil1 strip smoked bacon1 leek, dark green leaves removed2 large carrots4 celery stalks1 bunch parsley4 sprigs fresh thyme¼ cup flour½ cup peas½ tsp black pepper

Season chicken with 1 tsp salt.Cook vegetables until edges are browned, then add chicken, enough water to cover (about 5 cups) and 3 sprigs thyme.
